- Wash, trim, and peel the beet. Then grate it using a microplane or box grater into a small sauce pan.
- Place pan on the stove. Add in the water, stir and bring to a simmer over medium-high heat. Turn the heat down to low, and continue simmering for 2 more minutes. The mixture should look bubbly and a little foamy.
- Add in berries, lemon juice, cinnamon, and salt. Stir. Simmer for 5 minutes while occasionally smashing the berries with the back of a spoon. Use immediately or store for future recipes.
