Kohlrabi, Beet, and Apple Salad

Makes 4-6 servings


  • 1 large kohlrabi, peeled and finely shredded
  • 2 medium beets, peeled and finely shredded
  • 1 large apple, cored and cut into thin matchsticks
  • 2 Tbsp. parsley, minced
  • 2 green onions, diced
  • Juice of 1 orange
  • Zest of 1 orange
  • Juice of 1 lime
  • 1 Tbsp. olive oil
  • Salt and pepper, to taste
  • 1/4 cup sunflower seeds, toasted
  • Feta cheese


  1. Place kohlrabi, beets, apple, parsley, and green onions in a large salad bowl. In a separate, smaller bowl, whisk together orange juice and zest, lime juice, olive oil, salt, and pepper. Drizzle dressing over the salad and toss to mix.
  2. Sprinkle with sunflower seeds and crumbled feta cheese.
