Peach and Tomato Salad

Makes 6 servings


  • 1/4 cup balsamic vinegar
  • 1/8 cup olive oil
  • 1/2 Tbsp. honey
  • 1/4 tsp. fine sea salt
  • 1/4 tsp. black pepper
  • 3 medium ripe peaches (about a pound), pitted and cut into wedges
  • 1 pound tomatoes, cut into wedges (about 2 medium tomatoes) and/or cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup pecan, chopped
  • 1/4 cup fresh basil, torn


  1. In an extra large bowl, whisk together vinegar, oil, honey, salt, and pepper. Add peaches, tomatoes, onion, cheese, and pecans. Toss to coat.
  2. Top with basil. Serve immediately.
